This week is National Vegan Food Week. In honor, we wanted to highlight two vegan food trucks and offer up a vegan recipe in preparation for Thanksgiving. In case you’re wondering, the dictionary defines vegan as a strict vegetarian who consumes no food (such as meat, eggs, or dairy products) that comes from animals. So vegan food follows those same protocols.
Mike’s Vegan Cookout
Mainly serving central North Carolina (the Triad and Research Triangle Park), Mike’s Vegan Cookout claims to have the best vegan comfort food in the country. Bold words, but the reviews online seem to back this up! They serve up tasty and creative vegan versions of hamburgers, hot dogs, and other traditional cookout fare.
Ve-Go
Based in Charlotte, North Carolina, Ve-Go (or Vegan on the Go) is a food-truck style catering company. They have an extensive array of vegan options for larger gatherings. Their food style runs the gamut from Southwest, Carribean, to Asian. They will even arrange a private food truck event with you.
Martha Stewart’s Vegan Stuffing
What is Thanksgiving without stuffing? If you ask us, it’s simply not the same. However, even if you’ve made the switch to vegan, you don’t have to give up one of the best fall comfort foods. Leave it to Martha Stewart to come up with a vegan version of a Thanksgiving classic. The recipe is linked
